(Not your average) Baked Eggs

When Collin and I went on our Honeymoon, our first stop was romantic Paris. (It was a dream come true for me) We didn't have a rental car, just a bus pass, our shoes, and each other. I can honestly say it was one of the funnest vacations I had; although it was jam packed! 

ingredients For Two:

  • 4 eggs
  • 1 large sprigg of tarragon leaves chopped
  • Gruyere cheese
  • 1/2 cup of heavy cream

Directions

  1. Heat oven to 350F and bring a kettleful of water to the boil.
  2. Butter 2 shallow ramekins  and add some gruyere cheese.
  3. Crack 2 eggs into each. Season with sea salt and coarse black pepper, sprinkle with the tarragon and cheese, then spoon over 3 table spoon of heavy cream.
  4. Set the ramekins in a roasting tin, then -fill the tin with hot water. Carefully transfer to the oven and bake for 6-8 mins or until the egg whites are softly set and the yolks are runny. 
  5. Enjoy!
